Stolberger Lerchen are still made according to an old recipe in the butcher's shop in the "Zum Kanzler" hotel.
Friedrich Gottschalk once wrote in the paperback "Reisende in den Harz": "The Stolberger Lerchen are particularly tasty sausages..., jokingly so called because there are no larks in Stolberg. Folklore has it that the air escaping during frying, similar to the song of the larks, led to the name... (end of quote)
