Stolberger Lerchen are still made according to an old recipe in the butcher's shop in the "Zum Kanzler" hotel.

Their excellent taste and the stories that surround them, but above all the wonderful town in which they dwell and where they once originated in the "Gasthaus Kupfer" with the master butcher Mansfeld, make the Stolberger Lerchen unique.

Friedrich Gottschalk once wrote in the paperback "Reisende in den Harz": "The Stolberger Lerchen are particularly tasty sausages..., jokingly so called because there are no larks in Stolberg. Folklore has it that the air escaping during frying, similar to the song of the larks, led to the name... (end of quote)
